I have a recipe for pickled cucumber. It's an Indonesian recipe, called Acar Ketimun, and it's very easy to make.
Ingredients:
1 cup cucumber, sliced thick
1 small carrot, julienne
1 shallot, sliced
3-5 small whole hot green or red chilies (these are thai chilli peppers so go easy if you can't take heat, or you can omit it all together, even though I think it tastes better with the chillies.)
1-2 tsb sugar
½ tsp salt
1 tsb distilled white vinegar
1 tsb water
Directions:
In a bowl, mix all ingredients together. Let it stand for 2 hours before serving. Serve at room temperature.

I have done some homemade pickles when my kids were growing up. Some are rather simple. Others I couldn't find the spices for it. The easiers is Mrs. Wages. I like the sweet or kosher. Just remember to use freshly picked cucumbers otherwise they turn out soft.

BREAD & BUTTER PICKLES

8 large white onions
2 large sweet peppers
1/2 cup salt (not iodized)
5 cups cider vinegar
5 cups sugar
2 Tablespoons mustard seeds
1 teaspoon turmeric
1/2 teaspoon cloves (whole)
Wash cukes and slice. Chop onions and peppers. Combine with cukes and salt; let stand 3 hours and drain.
Combine vinegar, sugar and spices in large preserving pot and bring to a boil. Add drained cukes. Heat thoroughly, but do NOT boil.
Pack while hot into sterilized jars and seal at once.

get a pickle and cut it into 4 slices or more vertically
get some really good chopped up dry peppers
put the peppers on the pickles
pour some fish sauce on the pickles
*note-if you do this correctly it will be very good because it will taste sweet, sour, and spicy at the same time
