I'm looking after a friend's place, and he has mice, which totally FREAK ME OUT!
I don't want to use any chemicals because he has a dog.

So what food item is best to lure mice into a trap without them being able to snatch it up quickly and get away with it?

Well obviously mice are attracted to cheese, but they're quick and could snatch it up rather quickly and easily.

Peanut Butter but you have to wrap some plain old sewing thread. Those little devils can lick a trap clean of peanut butter without tripping the trap. But if you wrap some thread loosely around the peanut butter it catches them every time.

Good luck.

Also, don't use the glue traps. They'll scream like the dickens and no matter who you are it will freak you out! Good old standard trap with peanut butter and thread is quick and humane.

use glue traps. they're kind of like roach motels and are enclosed so when the mice go in, they get stuck and all you do is throw away the trap.
