Something for the kitchen is safe; you don't have to spend much. Maybe something in glass so you don't have to match colours - a serving platter, a cake stand, for example. A cookbook is good, too.

I would either earrings or a gift card at her favorite store.
Bridal showers are not just for family.. Where did that come from? Bridal showers are for the bride, and her friends and family

Could go with a 25$ gift card if she's not close. I wouldn't spend too much money... would indicate that she would want to keep you around just for the exorbant gifting.
Personally, wedding showers are for family only. If someone invites you and doesn't know you...sounds like a money grubber. I usually give a giant lollypop and write "sucker" on it. Don't forget the bow and card!

Find out where she is registered and pull her registery, if she does not have one, you can never, ever go wrong w/ a gift card from a dept store or from a place like Linens 'n Things or Bed, Bath and Beyond.

Ask if she is registered anywhere. A nice picture frame always works if there is no registry.
