Yeah, you can bring something ethnic as long as they are popular and easy to it. For sure that will jazz up the food table. :)

One of my favorite potlucks ever was when I worked at a grocery store in college with people of all different ethnicities. I got to try food that I had never tried before. I think you should take something ethnic. If it doesn't go over well, take something different for the next potluck. I would stay away from anything very spicy though.
Something that I take to potlucks which is usually a big hit and people ask for the recipe is:
Seven Layer Salad
Bag of iceburg lettuce
1 large red onion, chopped
1 green pepper, finely chopped
celery, finely chopped
9 oz. pkg. frozen peas, cooked and cooled
1 jar of Hormel real bacon bits
2 cups shredded cheddar cheese
½ cup Miracle Whip or real Mayo
½ cup sour cream
2 Tbsp. sugar
½ pkg. Good Seasons Dry Italian Dressing
Put the lettuce in a layer on the bottom of a large bowl, next the onion, then the green pepper, then the celery, then the peas, then the bacon, and then the cheese. Mix the mayo, sour cream, sugar, and Italian dressing and put in a layer on top. You can cover and refrigerate overnight. Don’t mix the dressing into the salad until right before serving.

Try this BBQ Green Bean recipe. And DONT knock it until you make it and try it. We served these at church dinners of 300-400 and had people begging for leftovers to take home. Never seen anyone else ever bring them to a dinner either.
Brown:
1 lb bacon
1 medium onion
Stir in:
2 C brown sugar
2 C ketchup
1/4 C BBQ sauce
Pour mixture into a 9x13 pan over 6 cans FRENCH CUT Green beans, well drained.
Bake at 250 for 1 1/2 - 2 hours.
Optional:
Sprinkle large can for French Fried Onions over 15 minutes before removing from oven.
NOTE: I have no idea why FRENCH CUT Green beans are so essential, but this recipe is absolute crap if you use regular Green beans.

It depends on if it needs to stay hot, or needs to stay crispy. If it doesn't taste good 1-2 hours old, chances are it will get office "judged". Try something in a crockpot, or something that can be reheated in the breakroom. I know that it's hard to eat healthy when you work in an office and fresh fruit salad and veggie trays went very well.
I raise 3 sons and a household alone (husband is in the field) and I will tell you that I found that bringing in something like little debbie cakes or a case of diet soda went over REAL well, and kept me from all the hassle. The only ones I need to convince that I'm an awesome cook are my boys.

Try these, they are easy to make and always a big hit.
Bourbon Dogs
Combine:
2 cups catsup
¾ cup bourbon
½ cup dark brown sugar
1 tbl. onion, grated
Mix in:
1 lb. Hillshire Farm Cocktail Links
Simmer in sauce over low heat for about 1 hour. If mixture thickens too much, thin with additional water or bourbon. Can be made in a crock-pot on medium setting until simmering, reduce to low for about an hour. Keep warm while serving.

We always volunteer for a hash-brown casserole. All you have to do is buy some fresh hash-browns throw in some onion, cheddar cheese and sour cream and bake it in the oven and its a real crowd pleaser. Cheap and easy to make. Just pray there are some leftovers, cause it is good. Paula Dean has a good recipe on the Food Network site.

That's the fun of having a potluck dinner so you can try all of the different things that people bring. Just make something that your good at making and if it doesn't go over good try something different the next time. You'll know when you get a hit because everybody will want the recipe.

I have a really good chicken recipe for a crock pot.
2-4 chicken breasts.
1/4 cup Italian dressing
1/4 cup water
1 tsp. garlic salt
1 pkg. onion soup mix
Cook on low for 7 to 8 hours.
For more food, just double the recipe. But cook the same amount of time.
It's really good !!!!

I always enjoy finger foods like veggie tray with dip or a taco dip that is really simple just a can of re fried beans and hamburger and Cheddar cheese to top and chips or go with a simple fruit salad strawberries and raspberry's there are a lot of ideas,keep it simple and have a great time.

considering getting all people in dress would be complicated, how approximately offering some masquerade mask with the rabbit and atypical faces from AIW on it. i think of Oriental procuring and merchandising has them. which could relatively help save the exciting temper of the occasion. For nutrition, I propose going to sams and getting each thing in mini variety. desire you have an incredible occasion!
