Use MANY

Dollars is a count noun (in other words, you can say 1 dollar, 2 dollars, 3 dollars, etc.) so you use "many"

"much" is used with non-count nouns -- for example:

How much money do you earn per month?

(generally speaking, you can't say 1 money, 2 monies, etc.)

You would say, "How many dollars" because dollars are a
specific unit. You use much when you're referring to something general.
