This (below) is usually used to lower the fat content of a recipe. Some recipes, such as for cake, you can substitute applesauce. But for a cream sauce, like beef stroganoff, you can use the yogurt.
Yogurt Cream
This requires two 8oz. containers of plain yogurt (not vanilla). Pour each one into a coffee filter, and place them side by side in a large tea strainer or small collander, over a bowl. Cover with plastic wrap and store in the fridge for 2-4 days. All the liquid will drain out, leaving the cream with no fat and no cholesterol. Use in place of sour cream in any recipe. Just remember that it takes at least two days to drain, so you need to do it ahead of time.
Once it has drained, if you can't use it right away, just store it in a sealed container. I have a friend who keeps this on hand in her fridge all the time, to use as a healthy replacement for sour cream!

cottage cheese that you have smoothed through a blender or food processor with a little bit of lemon juice
MAYBE a small amount of milk ( or buttermilk) with an oil, like butter, Crisco, olive oil.
RARELY, mayonnaise, but that is the riskiest option, in my opinion.
it all kind of depends on the recipe you are making, the taste you want to get, and the function the sour cream is serving in the recipe

I use ranch dressing.
It is even better then sour cream in recipes. We prefer it now and seldom use sour cream.
