Neiman Marcus® Cookie Recipe

2 cups butter
2 cups granulated sugar
2 cups packed brown sugar
4 eggs
2 tsp. vanilla extract
5 cups oatmeal
4 cups all-purpose flour
1 tsp. salt
2 tsp. baking powder
2 tsp. baking soda
24 oz. chocolate chips
18 oz. Hershey® Bar - grated
3 cups chopped nuts - your choice
-Cream together butter and sugars.
-Beat eggs and vanilla into creamed sugars.
-Combine oatmeal, flour, salt, baking powder, and baking soda.
-Slowly beat dry mixture into wet mixture.
-Stir in chocolate chips, grated chocolate, and nuts.
-Roll dough into 1" balls and place 2" apart on an ungreased cookie sheet.
-Bake in a 375 degree oven for 10 minutes.

1/2 cup butter or margarine - melted
1 1/2 cups graham cracker crumbs
1 cup chocolate chips
1 cup coconut flakes
1 can sweetened condensed milk - lowfat okay
1/2 cup chopped walnuts or pecans
-Pour in melted butter or margarine in a 9" X 9" pan.
-Sprinkle the graham cracker crumbs evenly over the margarine. Combine with a fork and press to bottom of pan.
-Place the chocolate chips over the crust, sprinkle the coconut over chocolate, pour the milk evenly over the top, and top with nuts.
-Bake 25 to 30 minutes in 350 degree oven.
-Cool at least 20 minutes then cut into desired sized bars.
BEST PEANUT BUTTER COOKIES
3/4 c. flour
1/2 tsp. baking soda
1/2 c. peanut butter
1/2 c. butter or shortening
1/2 c. firmly packed light brown sugar
1/2 c. granulated sugar
1 lg. egg
1 tsp. vanilla
1/2 c. salted Spanish peanuts (optional)
1/2 c. semi-sweet chocolate chips (optional)
Stir flour and soda together. Cream butter and peanut butter together. Beat in one ingredient at a time, brown sugar, granulated sugar, egg and vanilla. Add flour mixture and mix well. Stir in peanuts and chocolate chips.
Drop by heaping teaspoonfuls about 2 inches apart. Press down with floured fork making criss-cross. Bake in preheated 350 degree oven until light brown, about 10 minutes. Let stand in pan about 1 minute. Store in tightly covered box. Makes about 4 dozen cookies.

Ultimate Chocolate Chocolate Cookies
INGREDIENTS:
1 pound semisweet chocolate, chopped
2 cups all-purpose flour
1/2 cup Dutch process cocoa powder
2 teaspoons baking powder
1 teaspoon salt 10 tablespoons unsalted butter
1 1/2 cups packed brown sugar
1/2 cup white sugar
4 eggs
2 teaspoons instant coffee granules
2 teaspoons vanilla extract
DIRECTIONS:
1. Melt chocolate over a double boiler or in the microwave, stirring occasionally until smooth. Sift together flour, cocoa, baking powder, and salt; set aside.
2. In a medium bowl, cream butter with white sugar and brown sugar until smooth. Beat in eggs one at a time, then stir in coffee crystals and vanilla until well blended. Stir in melted chocolate. Using a wooden spoon, stir in the dry ingredients just until everything comes together. Cover, and let stand for 35 minutes so the chocolate can set up.
3. Preheat the oven to 350 degrees F (175 degrees C). Line two cookie sheets with parchment paper. Roll dough into walnut sized balls, or drop by rounded tablespoonfuls onto the prepared cookie sheets, leaving 2 inches between cookies.
4. Bake for 8 to 10 minutes in the preheated oven. Cookies will be set, but the centers will still be very soft because of the chocolate. Allow cookies to cool on the baking sheets for 10 minutes before transferring to wire racks to cool completely.

Believe me when I say these are great!
Ingredients:
1 (18.25 oz) box chocolate cake mix
2 large eggs
1/2 cup soft butter
1 cup semisweet chocolate chips
Directions:
Beat eggs in mixer, add butter; put cake mix powder on top. Mix together. Add chocolate chips. Roll into balls; roll in sugar. Place on greased pans. Bake in 375 F oven 10 mins.

make chocolate chip according to recipe then instead of full chocolate chips use half and half butterscotch. also add walnuts. yummmmmmmm.
