Yellow rice or white rice? For the beans: always use sofrito. Sofito is sauteed onions, garlic, and bell peppers; which are then pureed. This is your base. For more flavor add lard or bacon to the the boiling pot. If you don't eat pork, or are veggie, skip the lard and meat. Depending on the size of your serving, use 1-2 bay leaves. Add some cumin. Remember that cumin blooms with heat, so don't over do it. Salt and pepper to taste. Best to soak the beans for a few hours before cooking, and let them cook for about 2 1/2 hours. Good luck.

2 cans black beans
1 stalk each, celery and carrots, minced
1 small onion, minced
cumin
chili powder
garlic, minced
paprika
garlic powder
onion powder
salt and pepper
one red pepper, minced fine
1 can diced tomatos, chopped in the food processor or by hand.
water
Take all the veggies and garlic and add to heated oil, saute, 7 to 10 minutes, or until soft. Add beans, all spices, tomatos, some water and bring to a boil. Let this simmer for 30 to 45 minutes until thick, add rice and serve.
The spices you just have to work with.....I just add as I please.
Please do not add bay leaves to this. Or lard or bacon grease. Please.
