Spend time with them. Listen to them. I love going to my grand-parent's home and playing cards with them. I listen to stories that I've heard since I was a little boy, but I listen anyways because I know I'll miss hearing them when they are gone!

From what I have experienced in the home where my father lives, someone that comes to play music and sing really pleases them, and they like to sing along.
They also play with two liter bottles filled with liquids of different colors (use food coloring drops). They place the bottles on a line a few meters away from the person and the person throws a ball to try to knock the bottles down. You get for example one point for touching the bottle if it does not fall and 2, 3, 4 or 5 points depending on the color if the bottle falls. They create teams and each team has to decide on a name. Each person comes in turn to throw two balls per turn.
Usually, each person plays twice in a game, especially if you have people in wheelchairs because it takes a while to play a game. They seem to like that activity.
Hope it helps.

I'm not quite elderly yet, but I think having the ladies give each other manicures or having a makeup party would be fun.
