Peanut Butter Fudge

A favorite.
1 cup sugar
1 cup light brown sugar, firmly packed
1 cup evaporated milk
4 tablespoons light corn syrup
1 pinch salt
1 cup miniature marshmallows
1/2 cup peanut butter
2 tablespoons butter
1 teaspoon vanilla
1 8inch square pan

1. In a medium saucepan, cook sugars, evaporated milk, syrup, and salt to the soft-ball stage (240 degrees on a candy thermometer).
2. Just before removing from heat, add marshmallows, peanut butter, and butter; stirring until well blended.
3. Remove from heat and add vanilla, and beat until glossy.
4. Then pour into a buttered 8 x 8-inch pan.
5. Cool completely before cutting.
6. Store pieces in an airtight container.
7. Note: The pieces are also good dipped in melted dipping chocolate and sprinkled with finely ground nuts.

Favorite Peanut Butter Fudge

A favorite peanut butter fudge recipe with peanut butter, sugar, and nuts (optional).
INGREDIENTS:

* 2 cups sugar (half brown sugar if desired)
* 1/2 cup evaporated milk
* 2 tablespoons light corn syrup
* 1/4 teaspoon salt
* 1 teaspoon vanilla
* 1/2 cup peanut butter
* 1/2 to 1 cup chopped pecans or walnuts, optional

PREPARATION:
Mix sugar, salt, syrup and milk in pan. Bring to boil slowly.

Cook until small amount forms soft ball in cold water, about 235° on a candy thermometer. Remove from heat, add peanut butter and vanilla.

Do not stir. Cool to lukewarm then beat just until creamy, losing gloss and beginning to hold shape. Stir in nuts if used. Pour into a buttered loaf pan or 8- x 8-inch pan and cool. Cut in small squares.

*To Test for Soft Ball Stage
A small amount of syrup dropped into chilled water forms a ball, but is soft enough to flatten slightly when picked up with fingers (234° to 240°).

I would find a recipe for ordinary fudge and substitute half the butter with peanut butter, therefore if the recipe said 100gms of butter I would use 50gms peanut butter and 50 gms butter. It may be a case of trial and error but it'll be fun.

It is the easiest thing....

1 bag of powder sugar
1 jar of PB (regular size)
1 cup of room temp. butter

you'll need a big pot, a wooden spoon, and a square baking sheet.

turn the heat on med-low and melt the butter
stir with the wooden spoon
add the pb and keep stirring
slowly add the sugar

if you want, personalize the recipe by adding Vanilla extract, coconut, chocolate.. what ever!

* my secret are Butterscocth morsels... don't tell a soul!

melt it all together and pour into the baking sheet
refrigerate for what'll seem like an eternity ( 12 hours + )

cube and enjoy!
