I have a Guns N Roses DVD show, but the picture is bad. So, I want to convert it to an audio only file, preferable an mp3.

If the dvd is already decrypted or not protected by CSS then you can try one of many programs.
Xilisoft DVD Audio Ripper

Once purchased (or cracked if your are naughty) you can rip each chapter of a dvd to a seperate mp3 file.
Else you could try an ordinary dvd audio ripper like Vobrator or some other rippers

Get a demux program first.
Then you can use the extracted audio.
