I just ordered a Canon Rebel XT. I have an old 380EX that I used with my old Ellen IIe. I tried a few flash shots and they look okay. But I'm not sure what functionalities I lose by using such old model of flash, or are there any known problems using them together?

This has become rocket science, it seems.
With the latest gear, the camera will use the focus distance, the angle of the main flash, and all sorts of information to tweak the intensity and timing of the flash for each shot.
If everything looks fine with your old 380EX however, just stick with that.
