my friends & i are starting "sunday's at the beach/park". I'm looking for a variety of foods that do well outdoors. we did the sub sandwiches & we grilled already........what else is left ?

i am the fruit queen...everything i do also involves fruit trays so that goes without saying.....what kinds of salads? i would like something besides just a side salad, 3 bean, potato or basic macaroni

thanx littlebec...in the winter we have "desperate housewives sunday's" it's just a way for us to share the burden of cooking, catch up, and get ready for the week. we figure during the summer it's a good time to catch the nice breeze of the lake here in chicago, drink a glass of wine and have some light dining!

A HUGE variety of leafy salads, composed salads, roll-ups, chilled and grilled chicken sandwiches, anti-pasto type spreads of sliced sausages, cheeses and pickled items (olives, gherkins, etc), whole rotisserie chickens that have been chilled, sushi from the local market. Even certain varieties of quiche could be palatable from a cooler. You are only limited by your imagination!

Chilled and grilled fruit platter:

Using your favorite stone fruits, pineapple and apples - slice them about 1/4" thick, smear them lightly with your favorite preserves, grill them briefly (3-4 minutes per side)...enough to put grill marks on them, and then refrigerate, arrange them on a platter and wrap tightly. (Bring lots of wet wipes, they can be sticky, but MAN! do they taste good!!!)


Green Onion Rolls:
Using your favorite thin sliced sandwich meat, spread softened cream cheese on the sliced meat, you can add a little fresh cracked pepper or not, then roll each slice around a cleaned and trimmed green onion. Make 4 or 5 per person.

Croissant sandwiches that you precut, and bring all the fillings in containers and assemble them on location so they don't get soggy, tomato & cucumber salad, potato or macaroni salad. And how about some pre-cut watermelon"? Or any other fruit....

You can go to a supermarket and get the pre-roasted chickens, THEY ARE SO GOOD!!! serve them with store-bought or homemade potatoe or macaroni salad and maybe a tomatoe/cucumber salad.....

rooster wraps, potatoes salad, couscous salad, pasta salad, Cole Slaw, tricky boiled eggs, sandwiches, cheese cubes, already cooked sausages yet served chilly on a picnic, uncooked cucumber peppers carrots sliced and decrease with an incredible dip, brownies or cupcakes, cookies, brownies...

you could do fruit ca-bobs, with a variety of salads to choose from, or even more grilled food.

two words FRIED CHICKEN! and take some salads, maybe cubed cheeses, grapes, crackers and sodas.
