Zucchini Fritters Recipe
5 tablespoons Bisquick
1/2 cup parmesan cheese
1/4 teaspoon salt
1/8 teaspoon pepper
2 eggs, beaten
2 tablespoons butter
2 cups zucchini, grated
Blend the bisquick, parmesan, salt, pepper.
Add eggs.
Mix zucchini into batter.
Grease hot pan or griddle with butter.
Pour batter into pan and fry 3 minutes on each side.
Serve warm, a delicious way of serving zucchini.
Zucchini Parmesan Recipe
4 medium zucchini
1/2 lb butter
lemon pepper
garlic
parmesan cheese
Must have large frying pan.
Slice zucchini 1/4 slices.
Melt butter in pan according to taste.
Add zucchini and cover each slice with lemon pepper, garlic& parmesan.
Flip over and let cook until browned approximately 2-3 minutes.
Repeat on other side.
Small tip- wipe out frying pan between batches, to avoid to much blackening.
Cucumbers and Onions Recipe
This is similar to the recipe that my mother made when I was young. It is easy although the actual prep time seems long, it actually takes little time.
2 medium cucumbers
2 medium onions
salt
2-3 tablespoons mayonnaise or salad dressing
1 tablespoon sugar
1 tablespoon vinegar
Peel cucumbers and slice thin.
Layer in shallow dish, sprinkling each layer with salt.
Let stand overnight.
In the morning, drain cucumbers and rinse.
Let dry on paper towels.
Slice onions thin.
Mix gently with cucumber slices.
Beat together the mayonnaise or salad dressing, sugar and vinegar until creamy.
Stir into mixed cucumbers and onions.
(The dressing should be plentiful so the salad is creamy. Increase amounts of dressing ingredients, proportionally, if needed).

Cucumber Salad
Slice cucumber (thin-med) in a bowl. After you get a layer or so down, sprinkle with salt & garlic powder (You can also use minced fresh garlic-yum!) Continue until you're done slicing.
Cover & let it sit in the fridge (about 30 mins to an hour is good.) Just before serving, take it out of the fridge & squeeze the juice out of the cucumbers. Mix in sour cream (enough to cover all the cucumbers) and sprinkle it with paprika (just enough to make it look nice)

Slice a cucumber into paper thin slices. Add about a cup of chopped watermelon bite size peices. In a bowl mix together 1/4 cup vegetable oil
1T vinegar
3 T of sugar
Pour over the cucmber and melon. Let sit in fridge for 1 hour.

Ahhh your in luck. I just made this zucchini bread, you can also grate zucchini and freeze it as is for bread later on. Just squeeze out the zucchini after you thaw it. You can also slice zucchini length wise, hollow it out and cook the stuff you took out along with italian sausage, green peppers, onions etc. mix with spaghetti sauce and top with mozzerella cheese for zucchini boats. You bake, them. Recipes are online. You can also slice it and put it into vegetable beef soup, spaghetti sauce and make spice cookies with grated zucchini in the recipe. Make banana bread muffins with it also. I'm sure theres a pickle recipe someplace online too

i like to make cucumber salad diced cucumberswith onions ham and shredded cheese mixed together with ranch you can add or subtract anything you like take some red potatoes and slow fry them till they are almost done cut up zucchini and sqash and some kind of dinner sausge and put it all in with your potatoes my kids and husband loves that

with cucumbers you can make homemade pickles. mmmm
I like to make a cucumber salad using cucumbers, tomatoes, onions, bell peppers are optional and zesty italian dressing.
as far as the squash goes you can bake it fry it grill it put it in lasagna, make an all vegie casserole with cheese and cracker crumbs

i like basteing them with a little olive oil,salt and pepper. and if you likre paprika and cayenne, then grilling them
