Yes we work on Monday, just not Sunday, because it's the sabbath. Sometimes people don't WANT to work on Monday because it is family night. It is the night of the week set apart for people to be with their families.
Family Home Evening is a weekly observance of Latter-day Saints for spiritual training and social activity, usually held on Monday evenings. In 1915, the First Presidency of the Church wrote: "We advise and urge the inauguration of a "Home Evening' throughout the Church, at which time fathers and mothers may gather their boys and girls about them in the home and teach them the word of the Lord…. This "Home Evening' should be devoted to prayer, singing hymns, songs, instrumental music, scripture-reading, family topics and specific instruction on the principles of the Gospel, and on the ethical problems of life, as well as the duties and obligation of children to parents, the home, the Church, society, and the Nation" (IE 18 [June 1915]:733). To assist parents in their stewardship, the first home evening manual was prepared that same year and distributed to members of the Church.

I am mormon and I work on Mondays. I know that Mondays in Utah are a big deal because it is a night that is to be set aside for your family to do activities and such. Growing I my family never had family night though. My dad lived in Las Vegas and my mom was too busy trying to earn a living raising six kids. It is a day that should be put to the side just for your family and really it can be on any day I think Monday just work out the best for most families.

Of course they do! Maybe you got confused with Sundays. Mormon doctrine frowns on the practice of working on Sunday.
But Mormons also like to keep Monday evenings clear to be able to spend time with their families. Monday evenings have been officially designated as "Family Nights/Family Home Evenings" by the Mormon Church, wherein the family spends time together doing physical, fun activities, learning, games, etc. It's not a requirement or a sin of you don't have Family nights; it's just more of a suggestion.
