Epaulettes
Usually the Captain has 4 chevrons on his epaulettes, the First Officer has 3 and the flight engineer will wear 2
Varies with company and /or military service

What pilots where on their shoulders are called epaulets.
One Stripe - Flight Attendant
2 Stripes - Flight Engineer
3 Stripes - First Officer ( Co-pilot )
4 Stripes - Captain

I stand corrected: My husband says they are Epaulettes. He worked with pilots in the airline industry for many years so obviously he'd know.

In the airlines, the proper term is "epaulettes". (Not "rank bars" or anything else- even though they show rank, that's military.)
