Well all the Romance languages are important for the people who speak them... But I would say that Spanish has been the most important historically because of the power that Spain once had in the world. At the height of the power of the Spanish empire, it was conisdered as important to learn and use in Europe as English is today (though the same could be said of French), and it's the most widely spoken as a first language today in the Western Hemisphere.

And I'm pretty sure that Latin doesn't qualify as a Romance Language, since the definition is a language that is descended directly from Latin... (So, we're talking about Spanish, French, Italian, Portuguese, Romanian, Catalan, Galician, Sicilian, a lot of types of creole languages... etc.)

French, Spanish, & Italian are the most important. Also there is Portuguese, Catalon (eastern Spain), & Romanian. These languages are all derived from Latin.

Spanish = Italian = French = Romanian = Portuguese = Romance.
The last one is spoken in a small part of Switzerland.
Some people would like to include Catalan and other similar dialects, but they are not languages in my book.
