I am making a recipe that calls for a roast poblano pepper, I only have a hungarian pepper, will this work? Its Bobby Flay's recipe for Goat Cheese "Queso Fondito" that he serves at Mesa Grill.

A roasted Poblano is no longer called a Poblano, but rather an Ancho chile. Just like roasted Jalapenos are then called Chipotles. In order to get a similar flavor from the Hungarian pepper you will need to roast it. This imparts a smoky flavor to the pepper which is key to the finished product. There are several sites which give explicit and very simple instruction on how to roast a pepper. Foodtv.com, epicurious.com to name 2.

The dip sounds great even though I'm not a huge Bobby fan.

Not sure about how hot hungarian pepper is. Poblanos are hardly spicy at all. They are a little more spicy than bell. Try adding some chipotle tobasco to bell peppers for a smoked flavor.

You could substitute a jalapeno. A hungarian pepper probably doesn't have the right amount of heat, but I don't think it would taste bad. Give it a try, all it can be is bad, then you just don't eat it. I'm a big believer in - try it, if it sucks, order a pizza. good luck.

peppers are generally interchangeable, the finished product will just taste a little different. Go ahead and use what you've got- I won't tell Bobby!

yeah, just remember that the hungarian peppers are smaller.
