I was never a fan of pot roast, but I tried this recipe once because it was fast and easy. My husband says it was the best meal I ever made him, and we fought over leftovers!
3-4 lbs roast (can use pork or beef, but I really liked the beef better)
1 (10 1/2 ounce) can cream of mushroom soup, any brand
1 (1 ounce) package ranch dressing mix (some people use onion soup mix, I prefer Ranch)
Pepsi
1 large onion (optional)
2-3 potatoes, quartered (optional)
Place roast in the bottom of crock pot.
If you are adding onions and/or potatoes, cut these now and place on top of the roast.
Pour cream of mushroom soup over roast (and onions/potatoes).
Spinkle full pkg of ranch mix on top of the soup.
Pour Pepsi over all. I use enough Pepsi to mostly cover all ingredients, and because it makes the best sauce/gravy I have ever tasted!
Bake in crock pot all day, and enjoy a wonderful supper! If you want to start eating sooner, just cook on high.

I didn't get this recipe out of a book. I just looked at what I had in the frig and pantry, and threw it together. It was delicious and we will be eating it again soon! The pork comes out incredibly tender this way. The carrots sound a bit odd, but they really work well with this.
Crock Pot BBQ Pork Chops
2-4 lbs pork chops (I used boneless that I had gotten on deep discount, but I am sure you can use any pork.) 1 bottle BBQ sauce 4-5 carrots
Slice carrots very thinly. Place in bottom of crock pot. Layer pork chops with BBQ between layers. Pour rest of sauce in. Cook on low 8 hours.

One of my favorites is to take a roast and lightly coat it with seasoned flour on all sides. Then in a frying pan with a small amount of oil sear all sides. Add to your crock pot with about 1/2 cup of water. Toss in some Carrots, onions and potatoes cook for about 8 hours.
Also, You can take a Boston Butt or pork shoulder season well with all your favorites. Add to crock pot with 1/2 cup of water cook at least 8 hours. You can slice the meat or pull it for sandwiches and such.

My favorite is so very easy. I use a chuck roast, which is relatively inexpensive. You'll need:
Chuck roast
1 packet onion soup mix
1 can cream of mushroom soup
carrots
potatoes
Combine cream of mushroom soup with onion soup. Put all ingredients in crock pot. Turn on for eight hours. Dinner is ready. Enjoy!

I have two:
1. Peabody brisket:
You will need:
1 beef brisket, appropriately sized for your crock pot
olive oil
celery seed
dill (fresh is better, but dried works)
red wine (or you can substitute orange juice or a good vinegar if you don't do alcohol)
To prepare:
-Begin the morning or night before you want to have the meal for dinner
-Rinse and dry the brisket
-Rub the brisket with the olive oil
-Cover the brisket with the celery seed
-place a few sprigs of dill in the bottom of the crock pot
-add the brisket and add more dill on top
-add a few splashes of the wine or other acidic liquid
-If you are doing this the night before and want the brisket for dinner, put the crock pot in the fridge until the next morning
-Turn the crock pot on high for one hour and low for the rest of the day (should be on low for 7-10 hours)
-If you used fresh dill, you can remove it before serving to make it prettier and garnish with fresh dill sprigs
2. Ramey Lamb
You will need:
-1 onion
-fresh rosemary
-olive oil
-salt and pepper
-a leg of lamb or lamb chops
-red wine (or you can substitute orange juice or a good vinegar if you don't do alcohol)
To do:
-Begin the morning or night before you want to have the meal for dinner
-Rinse and dry the lamb
-Rub the lamb with the olive oil
-Sprinkle all sides lightly with salt and pepper
-Chop the onion into quarters
-Separate the layers of chopped onion and distribute them on the bottom of the crock pot
-place a few sprigs of rosemary in the bottom of the crock pot on top of the onion
-add the lamb and add more rosemary on top
-add a few splashes of the wine or other acidic liquid
-If you are doing this the night before and want the lamb for dinner, put the crock pot in the fridge until the next morning
-Turn the crock pot on high for one hour and low for the rest of the day (should be on low for 7-10 hours)
-If you used fresh rosemary, you can remove it before serving to make it prettier and garnish with fresh rosemary sprigs or parsley
-This can optionally be served with mint jelly
