According to Jewish practice they slaughtered and BBQ'd goats and chickens,etc.,because the scent was believed to be pleasing to their god.

What happened? Why don't jews still slaughter animals at the alter?

First of all Yaweh is the same as Jehova, the great I AM the God of the Bible. His law instructed the burnt offerings and sacrifices of the old testament, (BC). The Jewish people were never known for their ability to follow the laws of God, in fact, God had to do many things to keep their attention. I wont go into that because it is a diff subject. You will see many times in History where the Israelites (Jews) failed to give the offerings as they were supposed to. However, when God would punish them for there rebellious ways, they would go back to serve Him. Now, you have to understand that the offerings of bulls and goats and lambs were only symbolic of an offering that would be made one day to attone for the sins of the Jewish people, and also the sins of the rest of the world. That sacrificial offering was Jesus Christ, the Son of Yaweh, who was sacrificed for the sins of man. Now, since that time, no offering of Bulls, goats, or lambs has been required by Yaweh, because Jesus already made the offering, and no symbolism is needed. However, the Jewish religion does not believe that Jesus Christ was the Son of God, or the Messiah. They were in fact the people who cried out to "crucify him". Now since they believe that the Messiah is yet to come, your question remains, why no more sacrifices of Animals. I would say in theory, that regardless of modifications to the Jewish religion, the reason for the absence of the animal offering is that that Jewish people are no longer being constantly reminded by Yaweh, that an offering must be made. Yaweh is satisfied with the blood of Jesus, and will never ask for the blood of bulls and goats again.
