This is so yummy you'll love it.
You'll need butter, salt, pepper, mashed potato flakes.
Melt the butter (about half a stick)
Mix salt pepper (s&p to taste) and flakes (about a cup)
Dip the chicken in the butter and then press into the flakes. Try to flatten the chicken a little. Dip in the butter again and the flakes again. Once the chicken is fully coated you can bake the chicken in the oven for about 15 minutes on each side at 350.
I usually serve this with cheesy potatoes.
Get a can of Del-Monte Sliced Potatoes and drain.
Pour the potatoes into a small pan and add about 1/4 cup milk and 2 slices of kraft cheese. Add about 2 tablespoons of parmesan cheese and stir. The sauce will thicken a little. Add salt and pepper to taste.

Chicken Ritz Recipe
I love this recipe because it's so easy to throw together and takes no time to serve. It's a half hour in the oven and it's ready. It can be prepared a day ahead of time for those busy people, just keep it refrigerated. It's served best with cranberry sauce to the side or just spread on top of it after its cooked..it's yummy!!
2 lbs boneless chicken breasts (as much as you'd like to prepare)
1/2 cup butter, melted (I use one stick for about 4 chicken breasts)
2 packages of ground-up Ritz crackers
4 servings
1. Cut off all unecessary fat from chicken breasts.
2. If breasts are thick, cut in half so you butterfly them.
3. Pound down with a mallet so they're not too thick, but not paper thin either.
4. Dip the breasts in your melted butter, both sides.
5. Dip the buttery breasts into the ritz cracker crumbs, on both sides and press firmly so the crumbs really stick to it.
6. Place on a cookie sheet in oven set at 350* for 15 minutes on both sides.

You have many options, though I don't know how "quick" you want to make it : My favorite recipe is oven friend chicken - dip the pieces into melted butter or margarine, then swirl them in crushed rice krispies (or crushed ritz crackers, or rice chex) and then cook them for about 50 minutes on 375 degrees. SO YUMMY!
There's also the option of grilling them on a grill which should only take maybe 30-35 minutes, and you can use barbeque or marinade to give them flavor, and that's always pretty yummy too.

1/4 cup light italian dressing (wish bone brand is better) in a saucepan, place chicken breast in it, cover pan, high heat for 5 minutes, turn over chicken and cover again for about 5 to 8 minutes (depends on thickness of pieces) on medium heat, and that´s all. No salt, pepper, water or anything else needed.
Warning: at first heating dressing is a little "wacky" smelling ´cause the vinegar in it, but when finished is a good salty taste plate. and you can serve it with fresh salad, steamed vegetables or mashed potatoes (anything not to salty or spicy).

Smothered chicken breasts
Dice green peppers, onions and tomatoes. Saute them in a skillet in a little oil until tender. Grill chicken in a separate skillet about 4-5 mins. per side. Top with the sauteed pepper, onion, and tomato mixture, then top with some cheese (any kind you like). I use provolone and american. Cover and cook until cheese is melted. Makes an easy delicious chicken dish.

boil chicken breast until done, shredd into small pieces, boil rice
put rice in the bottom of cassarole dish. spread chicken evenly over the top then top with cream of chicken soup and cracker crumbs bake about 30 min. on 350. if you would like to add can veggies do so and mix with the rice. mushrooms are great with this. feeds about 6 or so

Take taco seasoning and coat the chicken with it. Then pour salsa on top of it. Bake in 425 degree oven for about 30-45 minutes, depending on how big the chicken breasts are.
Then take out and sprinkle cheese on the top. They broil until cheese melts. Yum!!!!!

Quick and easy: 4 boneless, skinless, chix breasts, flour, 2 eggs(beaten),salt and pepper, lemon(juice from 1), white wine or beer, white, seedless grapes;
pound breasts to 1/2 thick
salt and pepper
put flour(about 1 cup) into a plastic storage bag with salt/pepper
put 1 breast into bag, shake till coated,remove,dip into beaten egg
back into flour mix,
into medium frying pan with 1/2 in. of olive oil/butter combo
fry each side till golden-remove
add about 1 1/2 cup of wine and lemon juice-check seasonings
stir till slightly thick-add chicken and grapes for about 5 minutes
server over rice/noodles

chicken alfredo
cut up the chicken into bitesize pieces.
Sautee it in a little butter or oil with your favorite seasonings.
Cook some noodles
make Alfredo sauce either from a jar or packet mix.
pour sauce over noodles, add chicken on top.
you can also add a spoonful or two of pesto to the sauce to make chicken-petso alfredo. it comes in jars. Yummy!!
