Because that's just Archbishop Ussher's opinion. We don't set religious holidays based on the opinions of individual archbishops.

Because a lot of scholars have put it at a lot of different dates, in a lot of different religions, and few of those dates are celebrated. I think celebrating creation is pretty much the idea of the whole religion thing, so there isn't one day for it.
