Cuban Sandwich
A Tampa tradition, there is nothing quite like a real Cuban sandwich. They even have contest in the bay area to find out which rest. makes the best one. As I grew up eating these I crave them at times. Cuban bread comes in 3'or4' loaves here so many make up the whole loaf and cut into 2" slices to serve a platter at parties.
3 slices thin ham (almost shaved)
3 slices thin roast pork, hot or cold (I use hot, slow roasted pork)
3 slices thin salami (genoa is best)
3 slices thin swiss cheese
3-4 slices pickles
1/3 loaf cut Cuban bread, hard crust (or french bread)
1 sandwich

1. You should be using fresh, crusty Cuban bread, but you can always use an 12" loaf of french bread cut in half.
2. Slice the bread open face so that both halves are still barely connected and spread mustard on both halves.
3. Add the ham, salami and then the roasted pork.
4. When in a hurry, you can use one whole piece of roasted pork.
5. Add your swiss cheese and then a few pickle slices.
6. Make sure to spray your sandwich press with a little butter flavored Pam.
7. Place the sandwich in a sandwich press and press down until the cheese is melted and the bread is slightly hard to the touch.
8. For those of you without a press, you can also place the sandwich in a hot skillet and press down on it with a heavy kitchen object.
9. (some, believe it or not, use a brick wrapped in tin foil when nothing else is available).
10. When finished, slice the sandwich diagonally across the middle so that you have two triangle shaped wedges.

There are many variations on the Cuban Sandwich. On a traditional Cuban, there should not be any mayonnaise, tomatoes, onions, bell peppers or lettuce. Although you can use these to your own liking

1 tablespoon of unsalted butte at room temperature
3 thin slices of ham
3 thin slices roast pork hot or cold
3 thin slices of Swiss cheese
3 or 4 slices of dill pickles
1/3 cut Cuban bread hard crust (or french bread)
Dijon mustard to taste or yellow mustard

Slice the bread open face so that both halves are still barely connected and spread mustard on both halves. Starting with the ham followed by the pork, cheese, and dill pickles, arrange them evenly over the bread. Cover the sandwiches with the top halves of the bread.
Place the sandwich in a sandwich press, butter each side of the press and press down until the cheese is melted and the bread is slightly hard to the touch (approximately 10 minutes. ).
If you don´t have a press, you can also place the sandwich in a hot skillet and press down on it with a heavy kitchen object. When finished, slice the sandwich diagonally across the middle so that you have two triangle shaped wedges.

CUBAN SANDWICH

Traditional Ingredients:

3 slices of turkey (optional)
3 slices roast pork hot or cold
3 slices of salami
3 slices of Swiss cheese
3 or 4 slices of pickles
1/3 cut Cuban bread hard crust

Optional Ingredients:

3 slices of tomato
4 slices of green bell pepper
3 slices onion
1/3 cut French or Cuban bread
1 leaf romaine lettuce
mayonnaise, mustard to taste

It is important that the sandwich be prepared on Cuban bread, French or Italian bread - any artisan style bread with a hard crust.
All cold cuts should be sliced very thinly; almost shaved. Slice the bread in an open faced fashion and spread lightly with mustard first, then with mayonnaise. Remember this is not entirely traditional, but still good.

Add the ham (roast pork), turkey and salami. Next add a layer of tomato, pepper, onion and lettuce. Top the sandwich and press.

Press the sandwich on a hot skillet with a weight on top. A suitable weight would be a heavy (clean) cast iron skillet that has been heated until sizzling.

Or better yet, use a sandwich press or panini grill if one is available.

Cuban Sandwiches and their variations are sold in almost every Deli or Restaurant in Tampa, Florida.

Cuban sandwiches are good cold and for picnics or take-alongs, too.

first, you get french bread. slice it in half (long ways). put cuban oil on the bread. then atleast three types of meat and three types of cheese. add sliced onion, red, green and yellow pepper, and rub the outside with butter. wrap the whole sandwich in foil and bake at 350 degrees for about ten minutes. voila! a tastey cuban sandwich delight.

the secret is to add mojo sauce to the sandwich.the cold cuts are optional.
