hi diane: i have chicken about 5 times a wk. u can bake, fry,broil,boil,stir-fry,bbq..take off as much skin as u can prior to cooking unless ur baking it keeps it a bit moisture if ur cooking it whole. if u cook it w/crm soups remove skin soup keep it moist not dry.if u wish to bbq it place chicken in a pan of water enough to cover boil 15-20 mins. remove from water season to taste place on grill for about 5 mins boiling cooks it alot place any bbq sauces on one side for 3-5 mins flip and repeat and ur done..seasoning depends on ur diet if not salt use mrs. dashes seasonings there great if u do use salt lite sprinkle pepper onion whole or salted or powdered again if u use garlic fresh choped in fine pieces or use salted or powdered litely get a cook book on the back theres hints on what different seasonings to use..baking chicken can take anywhere from 50mins -1:30 baking whole usually takes the longer but at about an hr done ck it and use ur own judgement u "dont want it pink" white or dark moist is best. frying can be done in the oven the same as on the stove use salt or not pepper onion powder or salt garlic salt of powder shake litely over top and bottoms get a med size bowl about 2cup scoops of flour add some of the seasonings also to it litely. cornflakes mashed fine or to ur desired crunch u like chicken place also in a bowl for ur gonna place chicken in it once u've coated in egg and milk mixture if only doing say 6 pieces use about 2-3 eggs add more if needed use a small amount of milk say about less 1/4 cup again if use use more eggs and a bit more milk. than take ur chicken place in flour coat well an than coat in egg mixture and last in cornflakes coat both sides place in oil thats hot but not to hot and cook..a cook book will tell u the temp to use if using a oven to cook. i use an electric fryer myself on the ham or bacon temp for about 12 mins on each side in about an 1/4 inch of oil. canola is better for u again ur choice ..if u stir fry ur gonna chop chicken in small pieces or thin strips in a wok is best with a small amount of oil start with say 2 tablespoons stir constantly if u add fresh vegs or sprouts cook to ur desired crunch or not again look in a cook book on foods cooking with a wok.. u'll find ur own way of what u like and how to cook to suit urself.. good luck...sue...

I eat chicken no less than 10 times a week ,between my three meals. (not counting eggs of course.


I love to bread it and cook it into pasta (lemon wine sauce, alfredo) . I love to make catetory, chicken soup etc.


My favorite whole chicken recipe:

I am assuming you want a whole chicken.

Marinades are too liquidy to get that. What you need is a paste.

First soak it in a brine, which is salt water with peppercorns and dill. Soak it for a day. This will get the salt into the chicken. Cook it for about 2/3 of the required time.

Second, in a blender mix 1 bunch of scallions, 2 TBSP or Coriander, 1 bouillion cube, 2 TBSP pepper, juice of one lemon, 1 TBSP of mustard powder. When blended it should be pasty. If not, toss it in a pan and boil it down, until pasty. Rub this all over the chicken. You can double or triple the recipe if you want. The key is too make it pasty so that it sticks to the chicken.

Also try blending 1/4 cup of olive oil, 2 cups of fresh basil leaves, a handful of toasted pine nuts, lemon and salt. Do the same thing, except keep adding basil until it is pasty.

We eat chicken at least twice a week. So, I'm constantly looking for new ways to cook it. I made this just the other night, without salt and oil. Used poultry seasoning, black pepper and paprika. Basted the chicken with it's own juices 30 minutes into the cooking time. And yes, it absolutely is the best chicken I have ever baked!

BEER CAN CHICKEN:

1 (3 TO 4 lb.) frying chicken
1 can beer
Kosher salt
Seasonings and herbs to taste
Olive Oil

Directions:

Wash chicken thoroughly, inside and out. Dry chicken. Salt liberally on inside only.
Other favorite herbs and spices may be used as well. Tuck back wings.

Rub olive oil all over outside of chicken and season with favorite herbs and spices. (no salt)

Drink or pour out 1/3 to 1/2 of beer.

In shallow foil lined baking dish, stand chicken upright, tail down, with opened can of beer in cavity. Should stand like a tripod. Roast at 375 degrees for 3/4 to 1 hour, works best in convection oven.

Check for doneness, discard beer can and serve.

I eat a lot of chicken. It's the main meat I eat. Next is turkey, then fish and other seafood. I eat beef or pork only once or twice a month each. There's so many different ways to prepare chicken.
