When I cook stir fry, I take the meat and marinate it in soy sause for 24 hours. Then I chop Carrots, onions, yellow, red, and green peppers ( usually half of each pepper), and celery. I fry the meat, then dump the veggies in the pan with the meat and simmer for a while until all veggies are soft. Then I mix it with rice and bon appitit.

What's the problem with turning brown? I love the little brown parts on a sauteed piece of broccoli or pepper, a little oily, a little salty, a little crunchy, mmmmm. I use broccoli, carrots, green and red peppers, mushrooms, water chestnuts, and onions. Heat up some sesame oil, a pat of butter, add a whole lot of crushed garlic and ginger, and soy sauce, then add your veggies or meat quickly, before the garlic burns and stir fry away. If your mixture is too dry add more soy sauce at the end. Serve over rice.

above veg plus sugar snap peas, fresh ginger shavings, mushrooms, and red onion. Sauce: 1/4 soy sauce, 1/4 c. water, 1T corn starch, 1/4 corn syrup, 1/4 tsp. red pepper (or to taste).
It has to turn brown, b/c of the soy sauce. Cook it last and add the sauce, allow to warm and thicken then serve right away. I used to stir fry meat (chicken, shrimp or beef), remove, stir fry veg, then combine Viola: dinner

no bell peppers! Go with the first answer for ingredients...
The best sauce is Hoisin sauce, but it's generally for Mu Shoo... My wife and I love to use it as stir fry sauce though. Give it a try!

I dont think theres any real rules in cooking, the only way to innovate is to experiment. Good luck!
