My mother has Celiac disease as well (gluten intolerance). I always have to make special things for her. One nice picnic idea is a tomato, cucumber and onion salad, the recipe is as follows:
-One large seedless cucumber, sliced
-Three medium to large tomatoes, diced
-One medium red onion, diced
-1/2 cup apple vinegar
-1/4 cup Extra Virgin Olive Oil
-Salt and Pepper to taste
-1/8 tsp. Rosemary
-1/8 tsp. Italian seasoning
Mix all ingredients together, put in fridge for a few hours before you eat it; therefore, the flavors can mix well together.

Another nice idea are grilled red potatoes. These are the tiny red potatoes. Cut them into halves or quarters and mix them with your favorite seasonings and a little bit of olive oil. Put them in an aluminum foil bag and grill on med-med/high heat for 30 minutes. They are awesome.

What about a good chicken salad with some chopped celery, diced onion (if you like it), mayo or ranch dressing, spices and some chopped almonds? Chilled really well and serve it up on some good English wafer crackers. Throw in some fresh cut cold veggies like broccoli, baby carrots, cauliflower and celery along with the left over ranch dressing and there ya go!
