Hawaiian Chicken
INGREDIENTS:
6 skinless, boneless chicken breast halves
2 cups teriyaki sauce, divided
6 pineapple rings
1/2 cup butter, melted
3/4 cup packed brown sugar
3/4 cup soy sauce
3/4 cup unsweetened pineapple juice
6 tablespoons Worcestershire sauce
DIRECTIONS:
Place the chicken breast halves in a dish with the 1 1/2 cups of teriyaki sauce. Cover and refrigerate 8 hours or overnight.
Preheat a grill for high heat.
Lightly oil the grill grate. Place chicken breasts on grill, and discard marinade. Cook for 8 minutes per side, or until juices run clear. Brush with the remaining teriyaki sauce during the last 5 minutes. When almost done, place one pineapple ring on top of each breast, and brush with melted butter.
In a small saucepan over medium heat, mix the brown sugar, soy sauce, pineapple juice, and Worcestershire sauce. Cook, stirring occasionally, until sugar is dissolved. Serve with chicken for dipping!
Hawaiian Bread
INGREDIENTS:
1 cup margarine, softened
2 cups white sugar
4 eggs
1 cup mashed banana
1 (15 ounce) can crushed pineapple with juice
4 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons baking powder
3/4 teaspoon salt
1/2 cup flaked coconut
1/2 cup chopped walnuts
DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
In a large bowl, cream margarine and sugar together until light and fluffy. Mix in eggs, bananas and pineapple. In a separate bowl, sift together flour, baking soda, baking powder and salt. Stir flour mixture into egg mixture. Fold in coconut and walnuts. Pour batter into prepared loaf pans.
Bake in preheated oven for 60 minutes, or until a toothpick inserted into center of the loaf comes out clean.
Hawaiian Slaw
INGREDIENTS:
4 cups Cabbage, shredded
1 (8 ounce) can Pineapple, drained and crushed
1/4 cup Raisins
1/4 cup Nuts, chopped
1/4 cup Coconut, flaked
3/4 cup Cole Slaw Dressing
DIRECTIONS:
In mixing bowl, combine ingredients. Mix well. Chill until ready to serve.
Tropical Salad
INGREDIENTS:
6 slices bacon
1/4 cup pineapple juice
3 tablespoons red wine vinegar
1/4 cup olive oil
freshly ground black pepper to taste
salt to taste
1 (10 ounce) package chopped romaine lettuce
1 cup diced fresh pineapple
1/2 cup chopped and toasted macadamia nuts
3 green onions, chopped
1/4 cup flaked coconut, toasted
DIRECTIONS:
Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
In a cruet or jar with a lid, combine pineapple juice, red wine vinegar, oil, pepper and salt. Cover and shake well.
In a large bowl, toss together the lettuce, pineapple, macadamia nuts, green onions and bacon. Pour dressing over salad and toss to coat. Garnish with toasted coconut.
Coconut/chocolate pie
INGREDIENTS:
1 (9 inch) unbaked pie crust
1 cup milk
1 (14 ounce) can coconut milk
1 cup white sugar
1 cup water
1/2 cup cornstarch
7/8 cup semi-sweet chocolate chips
1 1/2 cups heavy cream
1/4 cup white sugar
DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Bake crust for 15 minutes, or until golden brown. Set aside to cool.
In a medium saucepan, whisk together milk, coconut milk and 1 cup sugar. In a separate bowl, dissolve the cornstarch in water. Bring coconut mixture to a boil. Reduce to simmer and slowly whisk in the cornstarch. Continue stirring mixture over low heat until thickened, about 3 minutes.
In a glass bowl, microwave chocolate chips for 1 minute or until melted. Divide the coconut pudding evenly into two bowls. Mix chocolate into one portion. Spread on the bottom of the pie crust. Pour the remaining portion of pudding on top of the chocolate and spread smooth. Refrigerate for about an hour.
Whip cream with 1/4 cup sugar until stiff peaks form. Layer the cream on pie; if desired garnish with chocolate shavings.

The problem is that finger foods are very hard to make in large amounts. Thats why true appetizer receptions often cost more than a sit-down meal. Finger foods are labor-intensive! Cheap, easy, and quick for a lot of people is a true challenge! How many people are you having? Honestly, I would consider a buffet. Have ham or roast beef, some roasted potatoes, a nice fresh salad, and a cheese/fruit display. Give your dishes an island flair with a fruity vinegrette for the salad, pineapple with the ham, well you get the idea. You can rent chafing dishes, or maybe your chuch has some you can borrow. Then set up a drink bar that has one each alcoholic and non-alcoholic signature island drink for guests to choose from. I would not want to spend my wedding day preparing coconut shrimp and barbeque pork.

You won't believe this, and I'm not sure I'd do it, but I recently saw a show on the History Channel called "America Eats." The meat which is most popular in Hawaii is---Spam! They use it on kabobs, and any other recipe where they would normally include ham. If you're not that brave, try fish, like mahi-mahi. I would definitely include a fruit salad heavy on tropical fruits, especially pineapple. And orchids are actually edible. They are becoming popular with chefs as part of salads. You could include a salad with some, or even use them as garnishes, if you can afford it.
