my auntie shared with me one diet secret -- that if you boiled the cauliflower and mashed it -- put some lite butter, a little salt and a little pepper -- it's like mashed potatoes. and it does taste (almost) like the real thing.

i grew up eating rice as a vital meal in our diet (im asian, that's why) and giving it up is really really tough for me. i'd rather give up sweets completely, than rice. that's why my auntie suggested this, and it worked. finally, i found something that i could eat instead of rice. however, i know cauliflower is a lot better than potatoes and rice, but cauliflower is also a carb -- do you think eating too much of this is bad? maybe in one meal, i could at about 2/3 to1/2 of a cauliflower (because they're mashed) and i add protein of course. it's just so good!

2/3 - 1/2 may not be too much, but you have to get other nutrients. As long as you are eating other vegetables (a wide variety, preferable), you should be okay. (There are a lot of low-calorie vegetables, if you are trying to lose weight. Eat, at least, a little of the higher calorie foods if they provide the nutrients you need.)

Try mashing some other vegetables into the cauliflower (too) --- like carrots, turnips... whatever you like.

That is, don't "only" eat cauliflower for a long period of time without getting other essentials you body needs.

Why would you give up rice???? Brown rice is good nutrition. But you asked if cauliflower is to high in carbs. Carbs are NOT bad. They are an excellent source of energy. and cauliflower has many vital nutrients as well. You do need to balance carbs, protein and fat. Any healthy food is good as long as it is consumed in a balanced and moderate fashion. Avoid the saturated fats and TFAs. They can hurt your vascular system!!!!

That's great, and I love Cauliflower. But did you know that if you organize a good diet with the Cauliflower it will help you loose weight too. Your aunt is pretty smart!!

Eating too much of anything can be bad, i would stick to no more than a cup serving, you dont want your meals to be too big.
