For the same reason raw turkey makes you puke but cook it up and you have Thanksgiving! Cooking changes the chemistry (chemical reactions take place in the presence of heat) and thus, the taste. ON the other hand, raw cookie dough tastes great whether it is raw or cooked. Go figure!!

Baking soda is what taste bad. During cooking it changes chemistry and the bad taste dissapears

Because batter has raw flour in it, and raw flour taste sucks.
Also, cooking it caramelizes sugars in the batter for a more rounded flavor.

because there is raw egg, flour and also buttermilk in there... sometimes baking soda too.. yuck... they are much better when cooked and topped with fruit hehe.
