I use this on fish, brisket, chicken,etc.
1Tbs.sweet paprika
2 1/2 tsp. salt
1tsp. onion powder
1tsp.garlic powder
1tsp.ground red pepper (preferably cayenne)
3/4 tsp. white pepper
3/4 tsp. black pepper
1/2 tsp. dried thyme
1/2 tsp. dried oregano
Combine in a small bowl. Sprinkle on meat or fish, trickle with olive oil and rub into meat.

Tony Chachere cajun seasoning is cheap and easy to use... it is available at most stores... don't know how to make it, but we use Tony's on everything!
