Grilled Pineapple

Wedges of pineapple (cored of course)
Maple syrup
Chocolate
Frozen Vanilla Yogurt or Ice-Cream

Place the pineapple wedge on parchment paper pour maple syrup over the pineapple. Wrap the parchment paper around the pineapple so the syrup won't leak out and place it on your BBQ with a low flame. Grill for about 10 minutes or so, until the pineapple is softened.

Melt the chocolate in a double boiler. Unwrap and plate up the wedges. Serve with the frozen yogurt on the side and drizzle the melted chocolate over the pineapple and yogurt. It's very nice, the chocolate hardens on the yogurt but stays melted on the pineapple.

Kind of hot and cold at the same time. hummm... guess that doesn't meet you're nothing hot requirement. Oh well, its a good summer time barbecue recipe anyway so I'll leave it here.

Well this is hot, but it's a campfire dessert recipe so it counts as a fun summer dessert.....they're called campfire eclairs, and they're AWESOME! You need to get some wooden dowel rods, cover one end of each w/aluminum foil. Take a refrigerated biscuit and wrap it around the dowel, sticking the ends together so it's kinda like a tunnel. Cook that over the fire till it starts getting golden brown, then let it cool off a bit. Take it off the dowel rod, fill the inside of the tunnel with vanilla pudding, and spread the top w/chocolate frosting.......YUMMMMMMY!

This is similar to no bake cheesecake but tastier
1 Pre made ghraham cracker crust
2 packages cream cheese
cool whip
powdered sugar
soften cream cheese, with electric mixer beat in 1 to 2 cups powdered sugar, depends how sweet you like things. ( This can really be made to suit yourself), begin adding cool whip, about 2 cups usually does it, beat till smooth. Spread into crust, chill. Top with cool whip, fruit, chocolate shavings... whatever.
Seriously I mixed in chocolate shavings and cherries once, you can put in anything.....
