In Taiwan, it's called Mandarin Chinese, or the official langauge. In Mainland China, the same language/dialect is called Putonghua. Both are the same and the most understood langauge by the Chinese.

Mandarin Chinese (putonghua, guoyu) is the national language of both China and Taiwan. It is taught all over China (even in Guangdong where they speak Cantonese). If you speak Mandarin, there would be very few people (such as most of the people in Hong Kong) that would not be able to at least understand you. You may not always understand them, because a lot will speak in their area dialect, but if you ask them to speak Mandarin, they will so that you will be able to talk with them.

It could have to be Mandarin Chinese it has the most speakers in the world and also in China, which is followed by Cantonese..most people speak Cantonese in the south or Hong kong...
