A clove of garlic is a segment/piece of the whole bulb. To peel the cloves easier, soak in fairly hot water first, then peel or roll a clove of garlic under a large knife.

Just one segment - might change your recipe slightly if you put in the whole bulb by mistake!!!
Do remember that garlic makes your breath smell but however it also protects you from cancer.
