You don't need to; you can use them as you get them from the store.

Pine nuts roast really quickly. I spread a single layer in a HOT non-stick frying pan and keep shaking it (like tossing a pancake but with smaller movements) The kernels will be lovely within a few minutes.

Dry non stick frying pan. Put the pine nuts in the pan and put on a hot heat. After about a minute shake the pan. Dont leave longer than about three minutes. Watch them carefully as they burn.

Turn on your oven to 250 degrees. Spread out the pine nuts on a cookie sheet, in a single layer. Toast 'em for about, oh, 8 minutes, then take a spatula or cake turner and turn them as best you can. Toast 'em for another 8 minutes, or until you smell the fragrance of pine nuts. Be careful to watch them so they don't burn.

You don't. According to the original Genoese pesto recipe all ingredients must be FRESH and RAW. And remember: there's no substitute for pine nuts - walnuts, cashews or anything else.
Buon appetito!

In a frying pan, no oil. Make sure it is hot and keep them moving around. About 4 minutes in a hot pan.

Dry fly them in a pan on the stove.
Don't worry about recipe measurements or ingredients too much either, try some pistachios in there too and some rocket

I just use a small frying pan and roll them around in it for a few minutes, being careful not to scorch.
Happy cooking!
