"Cheese and Potato Bake
900g (2lb) Potatoes
450g (1lb) Leeks
450g (1lb) Courgette
300ml (½ pint) Vegetable Stock
225g (8oz) Button Mushrooms
1 large Onion
160g (6oz) Cheddar Cheese grated
50g (2oz) Butter
25g (1oz) Plain Flour
3 tbsp Milk
2 tsp Paprika
Cut the potato into cubes, slice the leeks, onion and courgettes.
Boil the potatoes in salted water for 15-20 minutes or until tender.
Drain and mash with the milk, half the cheese and half the butter.
Heat the remaining butter in a large pan and fry the leeks and onion for 4-5 minutes, until softened.
Add the courgettes, mushrooms and paprika and fry for a further 2 minutes.
Sprinkle in the flour, then slowly add the stock and bring to the boil, stirring continuously.
Cover and allow to simmer for 5 minutes.
Pre-heat oven to 200°C; 400°F: Gas 6.
Spoon the vegetable mixture into an ovenproof dish and cover with the potato mixture, sprinkling with the remaining cheese.
Bake for 20-25 minutes or until the top is crisp and golden brown."

I think you mean scallopped potatos, or potatos au gratin. there are thousands of recipes for these, but basically you peel and slice raw potatos, layer them in an ovenproof dish with grated cheddar cheese, butter, flour, salt, pepper, and onions (if you like). You can also add a little dijon mustard or worcestershire sauce. Then you pour milk over them to almost cover, and bake for about an hour at 350. If you want a more specific recipe, just google either of these - you'll get tons of hits!

The perfect baked potato
Ingredients
2 fat, floury potatoes (maris piper, king edward or marfona are all good bakers)
olive oil
flaked sea salt
For the Gratinated Smoked Trout Filling:
2 baked potatoes
2 smoked trout fillets
1 tbsp chopped parsley or chives
2 handfuls of grated mature cheddar cheese
1 tsp hot horseradish sauce or English mustard
2 large knobs of butter
flaked sea salt and freshly ground black pepper
For the Curried Cream Cheese Topping:
2 baked potatoes
150g/5oz cream cheese
1 tbsp medium curry paste
4 spring onions or ½ small red onion, chopped
approx 2.5cm/1in piece of cucumber, cut into dice
1-2 ripe tomatoes, chopped
a small handful of mint or coriander leaves, roughly chopped
good squeeze of lemon or lime juice
flaked sea salt and freshly ground black pepper
Method
1. Preheat the oven to 200C/400F/Gas 6.
2. Wash the potatoes well, dry them and prick several times with a fork. Pour some olive oil into your hands and rub over the potatoes, then scatter over some sea salt which should stick to the oil. Place directly on the shelf in the oven and bake for a good 1¼-1½ hours, depending on the size of the potato. When cooked, the potato should be golden and crispy on the outside and give a little when squeezed. Serve split open with lots of salted butter or try one of the other suggestions.
For the Gratinated Smoked Trout Filling:
1. Preheat the grill to medium-high.
2. Split the baked potatoes in half and scoop out most of the fluffy flesh with a fork into a bowl. Flake in the trout and add the parsley or chives, three-quarters of the cheese, the horseradish or mustard and butter.
3. Season with salt and pepper and then lightly mix together. Spoon back into the potato skins, sit on a baking sheet and scatter over the remaining cheese. Grill until the cheese is bubbling and the filling is becoming golden in places.
For the Curried Cream Cheese Topping:
1. Mix together all of the ingredients, except the baked potatoes, and season with salt and pepper.
2. Split open the cooked potatoes and spoon the cheese mixture on top: it will melt and ooze into the hot, steaming potato.
Tips:
Try adding the following to the curried cream cheese:
1 tbsp mango chutney for a sweet touch
cooked prawns or shredded cooked chicken
chopped hard-boiled egg
sultanas soaked in a little warm water for 10 minutes
roasted peanuts or cashew nuts
