I suggest not to skip a meal but SHARE it with another soul who is hungry. This will go a longer way than skip yr meals.

When I was in college, I used to work for a sub shop and I got a free sub each shift. Sometimes people would come in and say they hadn't eaten, and I would make my free one for them.
I haven't come in contact with someone to feed, one on one, in a long time.
I did start a yahoo group that sent out shopping lists, menus and recipes in the hopes that people would use them instead of eating out so much and that they would send part of their savings to charities.
I'm disappointed to say I haven't kept up with it.
I've been cooking for 25 years, but I rarely use a recipe. So I found it really difficult to come up with recipes to send (most are copyrighted) and I was a little afraid my general directions might not work for some. (And it was quite time consuming trying to remember how I cook everything and type it all up.)
I've been trying to create recipes as I cook, but it's tough to remember to notate as I go sometimes.
(I notice from your profile that you cook. I'd be grateful for ideas....)

That's a good idea, actually.
Or just eat at home for a month, and give the money you would normally give to restaurants to a homeless shelter.
