I have a garden and I would like to make some salsa with soem of the tomatoes.

Fresh easy Salsa...Everyone else's has too many ingredients..And what is up with basil and bay leaves in Salsa. It almost sounds like they are from "new york city". Sorry had to put a Pace Picante saying in there. Also, it isn't the seeds that make a pepper hot it's the membrane holding the seeds to the walls of the pepper that make it hot. This recipe doesn't go by exact measurements because it varied from how many ripe tomatoes came from the garden. Just eyeball it.

Aunt Gloria's Mexican Salsa (that's where she grew up)
Diced tomato
Diced onion
A handful of chopped cilantro
Diced jalapeno (how many is up to you for heat)
Squeeze of lime juice
Salt and pepper to taste
Toss it all together. And if you want to put it in a food processer and give it a whirl for about 30 seconds for a smooth salsa. Or just leave as is for the chucky style. Serve immediately or put in a container and put in the fridge and let it chill.

Make it as hot or as mild as you want the flavor will still be wonderful. It can be doubled or tripled or whatever. This recipe will feed 4 adults a snack.

2 large tomatoes, seeded (don't have to) and diced
1/2 small sweet onion, finely chopped (like Texas sweet or red)
1-3 jalapeno, finely chopped
2 tablespoons cilantro, chopped
1 clove garlic, finely chopped
2 tablespoons lime juice, fresh squeezed
1 teaspoon olive oil
3/4 teaspoon salt
1/2 teaspoon cumin
1/4 teaspoon black pepper

Combine all the ingredients and chill for 2 hours before serving with chips.
The Cilantro is very important to this dish.

Salsa sometimes requires cooking the tomatoes. You should try pico de gallo. The trinity (tomatoes, about 4 jalapenos, onions) are added with fresh cilantro. Take the seeds out of the penos if you want a milder flavor. GOTTA have cilantro!! Add some olive oil and salt and pepper for flavor and preservative. You might also want to try a seasoner called adobo. Fresh chopped garlic is optional.
Serve it ready-made or chill : )

1 Onion
2 Lb Tomatoes -- Very Ripe
2 Tbsp Olive Oil
1 Clove Garlic
1 C Beef Stock
1 Bay Leaf -- Crumbled
1/2 Tbsp Parsley -- Freshly Chopped
1 Tbsp Oregano
1 Tsp Sugar
1/4 Tsp Thyme
Salt -- To Taste
Optional
12 Green Olives -- Pitted And sliced

Chop the onion well. Singe the tomatoes over an open flame and peel and
chop them. Heat oil and saute the onion and clove of garlic until onion is
soft and transparent but not brown. Discard garlic. Add Tomatoes, stock,
bay leaf, parsley, oregano, sugar, thyme and salt to taste. Cook until
slightly thickened. Add the olive rings

Eight tomatoes, two small onions, fifteen jalapenos, few teaspoons of garlic, small bunch of cilantro, 1 bottle of salsa brava. You can either boil the vegetables or not. Blend them together in a blender.

3 tomatoes chopped up fine
Some fresh basil....
salt and pepper to taste.....
1/2 small green pepper chopped fine
1/2 small onion chopped fine....

my recipe...can be hot depends on how much jalepenos you add...

diced tomatoes and any of their juice
diced jalepenos
diced garlic
diced onion
chopped cilantro
a bit of sugar
a bit of white vinager
