Pesto, Macaroni and Shrimp Salad
3 cup Uncooked medium shell macaroni
1 tablespoon Olive or vegetable oil
1 Pesto or; (8 ozs)
1 cup Pesto
4 Italian plum tomatoes; each cut into 4 wedges
1/2 cup Small pitted ripe olives
1/4 cup White wine vinegar
4 cup Coarsely shredded spinach
1 pack Frozen cooked; (6 ozs)
Tiny shrimp; thawed
Grated Parmesan cheese
Cook macaroni as directed on package; drain. Rinse in cold water; drain and toss with oil. Mix pesto, tomatoes, olives and vinegar in large bowl. Arrange 2 cups of the macaroni and 2 cups of the spinach on pesto mixture; repeat with remaining macaroni and spinach. Cover and refrigerate at least 2 hours, but no longer than 24 hours. Add cooked tiny shrimp. Toss; sprinkle with cheese.

Classic Italian Pesto
2 cups fresh basil leaves
1/2 pound Parmaseano Regianno cheese, cut into 1-inch cubes
1 cup extra virgin Italian olive oil
1/2 cup pinon seeds
1 teaspoon salt
1 teaspoon ground black pepper
Place cheese in food processor and chop until you achieve a fine grate. Add remaining ingredients except for oil, and chop until all are finely chopped. With blade moving, drizzle in the oil and continue until well-blended. It should be a thick paste, but add more oil if you like it thinner. Adjust seasoning. Scrape into a sealed container and refrigerate. Bring to room temperature before using. Keeps in refrigerator about 2 weeks.

Shrimp Gambino
Preparation time: 8 minutes
Cooking time: 20 minutes
Makes 2 servings
6 ounces dried linguine
1 tablespoon olive oil
3 cloves garlic, minced
3/4 pound raw, tail-on, peeled shrimp
1 can (14 1/2 ounces) peeled, diced tomatoes,
2 ounces crumbled feta cheese
2 tablespoons fresh minced parsley, optional
Heat oven to 400 degrees. Heat water to a boil in a Dutch oven for pasta. Cook pasta according to package directions until al dente, about 10 minutes; drain. Set aside.
Meanwhile, heat olive oil in a large, heavy skillet over medium heat. Add garlic; cook, stirring, until golden and fragrant, about 1 minute. Add shrimp; cook, stirring, until shrimp begin to turn pink, about 2 minutes. Add tomatoes, stirring to blend; cook 2 minutes.
Toss shrimp-tomato mixture with cooked pasta. Place in a buttered 2-quart casserole; sprinkle feta over the top. Bake until sauce is bubbly and feta is slightly melted, about 10 minutes. Garnish with parsley

shrimp scampi
angel hair pasta cooked according to package
2 sticks of butter
4 tablespoons garlic
5 shakes Parmesan cheese
pinch of parsley-fresh or dry
1/2 cup white wine(if desired)
get the butter melting in frying pan and add other ingredients
next add small bag of shrimp(25-30)
cook about 5 minutes
pour over pasta
garnish w/fresh ground black pepper and more parm cheese.
2 servings
for the salad dressing- i use the good seasons and prepare according to package

Cook some angel hair pasta, get some Bertoli Pesto sauce in your pasta sauce section, add pasta and pesto, large peeled shrimp and even some pine nuts if you would like. Warm, top with fresh parmesean.mmmmmmmmm
