flowers can open at different times, mostly depending on pollinator activity. lots of white trumpet-shaped flowers open at night for moths to visit; other plants open late in the afternoon (eg Evening Primrose); others open at day-break (eg Morning Glory).

because the flower can use the sun to create energy. but when the sun goes down it can not make any more energy. but it takes more energy to keep the buds open than it is to close them at night and open them in the mouring. it is all about energy conservation.
and that process she is refering to is called photosynthesis.
