CANDY APPLES

8 sm. Red Delicious apples
8 wooden sticks
3 c. sugar
1/2 c. light corn syrup
1/4 c. red-hot candies
1/2 tsp. red food coloring

1. Wash and thoroughly dry apples. Insert wooden stick part of the way through stem end of each apple.

2. Grease large cookie sheet; set aside.

3. In medium saucepan over medium heat, bring remaining ingredients and 1 cup water to boiling, stirring until sugar and candy are dissolved.

4. Set candy thermometer in place and continue cooking, without stirring, until temperature reaches 290 degrees or until a small amount of mixture dropped into cold water separates into thin, hard threads--about 20 minutes.

5. Immediately remove syrup from heat and dip apples. Tip saucepan and swirl each apple in mixture to coat evenly; lift out apple and swirl over saucepan a few more seconds to catch drip. Place apples on greased cookie sheet to cool.

6. Work quickly before syrup hardens. If it does harden, place over low heat to soften.

7. Cool at least 1 hour before serving.

8. Yield: 8 candy apples.

Candy Apples Recipe courtesy Andrew Shotts

Recipe Summary
Difficulty: Medium
Prep Time: 5 minutes
Inactive Prep Time: 3 minutes
Cook Time: 10 minutes
Yield: 6 apples
User Rating:

Wooden sticks
6 Fuji or Granny Smith apples
1 bag candy corn
1 bag licorice bits
1 1/2 cups water
4 1/2 cups granulated sugar
1 1/8 cups corn syrup
3/4 teaspoon red food coloring

Clean apples. Place a wooden stick in the center of the apple. Set aside. Place the candy corn and licorice in separate bowls.

Place the water, sugar, and corn syrup in a clean 3-quart saucepot. Stir to form wet sand.
Place on medium flame until the sugar boils; at that point increase the heat to high. Occasionally, wash sides of pot with cold water and a brush, if needed, to prevent crystallization. Cook on high heat to 283 degrees F. Add red food coloring and swirl around in the pot; do not stir. Continue to cook to 328 degrees F. Remove from the heat and let rest for 3 minutes.

Dip the apple on an angle, rotating the apple clockwise, to coat the apple. Immediately roll the apple in candy corn or licorice. Set aside to cool.
