Soy Sauce Chicken and Oriental Chicken Salad
Cut up (buy) a chicken into 8 pieces and then cut breast in half for 10 pieces total
In a large 6-8 qt pot on med hi heat put in:
2 Tbls vegetable oil
1/4 cup soy sauce
1 tsp chinese 5 spice
3 cloves garlic crushed, not diced
2 slices fresh ginger
1 tsp sugar
2 tsp oyster flavored sauce
Add 5 pieces of chicken at a time
Cook covered for 20 mins and then turn pieces over to coat and cook additional 15 mins. Check drumsticks and cook additional 10 mins if needed.
Repeat ingredients to cook second batch of chicken.
Shred 1/2 head green cabbage and 1/2 head red cabbage
large grate 2 carrots
1 large head of romaine lettuce large cubes
1 head Napa cabbage
4 green onions thinly sliced diagonally
1 1/3 cups crispy chow mein noodles
1/2 cup toasted sliced almonds
Dressing: (prepare night before or earlier)
1 cup water
1/4 cup honey
2 Tbls dry pectin
1/4 tsp soy sauce
2 garlic cloves through garlic press
2 slices fresh ginger through garlic press
1 Tbls rice wine vinegar
1/4 tsp pepper and salt
1/4 tsp paprika
Cook dressing over med heat until thickened and bubbling. Cool and refrigerate in old mayonnaise jar or similar container. Add 1 tsp sesame seed oil to cooled dressing.
Pack the chicken in a separate container
Pack the salad in large bowl with lid (rubbermaid)
pack the chow mein noodles and almonds in container.
At picnic shred 2-3 pieces of the chicken breasts over the salad
pour dressing over the salad and mix.
Add noodles and almonds and toss.
Serve

Salads. Try macaroni salad, potato salad, coleslaw, 3-bean salad, or a green salad.
Sandwiches. Good bets are eggsalad, cheese, or peanut butter and jam.
Hors D'Oeuvres. Some celery with Cheez-Whiz, Ritz crackers, cubed mozarella and cheddar, green olives, green pepper slices, tomato slices, cucumber slices, baby carrots, radishes and button mushrooms. Serve with dip.
Fruits. Make a fruit tray with sliced apples, pears, strawberries, and green grapes.
Dried fruit and nut tray. Include dried apricots, peanuts, cashews, etc.
Assortment of crackers and pretzels.
Dessert tray. Brownies, Rice Krispies Squares, cookies.
Plenty of beverages. Iced tea, lemonade, bottled water.

Stay away from salads with mayo because they can go bad very quickly. Stick with vinegar based. I would say some sandwiches, big kaiser buns with your favourite deli meats and cheeses and some fruit such as strawberries and grapes. The Kool Aid Coolers would also be a must, they are so convenient and my kids love them.

Cold egg and bacon pie, sandwiches, scotch eggs (hardboiled eggs completely wrapped in flavoured mince meat and fried, served cold). My favourite the hero sandwich - a long crunchy breadstick split and spread with cream cheese, filled with salami, tomato, pickled cucumbers, capsicum, red onions, sliced button mushroom, in fact just about anything that takes your fancy, wrapped tightly in clingwrap and chilled for a few hours. When ready to eat, cut into big chunks and everyone has a really yum salad roll.
Add crisp white wine, (pick a designated driver first on this one) or lots of icecold sparkling mineral water
A wonderful dessert to follow is big slabs of cold apple pie, served with swiss cheese, or for the purists, chilled whipped cream.

You can make a fruit salad, and some home made jello. I love slice turkey, and cheese sandwiches.

any kind of cheese, crackers, a homemade dip (such as spinach & artichoke or guacomole), potato salad made from red potatoes (skin left on), grapes, fresh loaf of bread, and a chilled bottle of white wine.
