To the best of my knowledge, the human body does loose some weight a few moments after death. I believe this is caused by the lungs collapsing, the bladder & bowell release, ect.
Once the central nervouse system shuts down ( total brain death) , all autonomic functions cease and thats what causes this.

When you die you pee and poop whatever is in comes out.
Is that what you mean? OR do you mean the process of dying/
if a long drawn out death sometimes they lose weight sometimes not.
if a car accident death no weight loss.

It has been rumored that when a person dies, he/she weighs 21 grams less than when he/she was alive, making the soul of a human having weight.
This has never been proven. Ethically, I don't believe it ever will be proven.
