It will depend on how low in carbs you want to go. All 100% meat products are zero % carbs - chicken, beef etc - if you go for your processed meats check your packages to see what is added to them because that will most certianly add carbs.
As for your veggies - some veggies are lower in carbs than others - stay away from starchy veggies like corn, potatoes, even carrots are higher in carbs than other veggies. Lower carb veggies are lettuce, green and yellow beans, beets. A great book for carb counts (and nutritional counts) is Netzer's - a lot of lowcarbs use this book. A program for the computer that I use a lot that has great nutritional info in is a recipe program called MasterCook.
Also any of your pasta's, breads, sweets - will all be high in carb counts - unless they have had been reduced by using special protein wheat flours in baking. I make special low carb bread when I'm in the mood and have other special treats that I can make that have lower carb counts. But its all what you put in it and there are places out there that specialize in products that you can buy. But for the run of the mill items - check your labels or go 100% natural. anything with sugar and flour is full of carbs stay away from anything processed ... cookies cakes bread pasta etc..
