i need an easy and quick, yet delicious recipe involving porkchops or chicken thighs. can anyone help me as i need 2 make a gr8 dinner to impress sumone

This is so easy..

Parmesan Pork Chops (2 People)

2 very thin pieces of pork (no bone, if you can't find it boneless just cut the pork off the bone)
1cup Parmesan
1cup bread crumbs
1tsp oregano
salt
pepper
1 egg
2 pie pans or deep plates

Mix together Parmesan, bread crumbs, oregano, sprinkle salt, pinch of pepper into pie pan.

1egg WHITE into 1 pie pan and beat until frothy

Take 1 pork and dip it in the egg thoroughly then dip that into the Parmesan mix top and bottom so it's well covered. Throw it on a griddle or in a skillet about 3 mins each side or until golden brown a little darkness is fine too. Repeat with other pork.

Great with some steamed broccoli, carrots and potatoes

Porkchops breaded w/shake-n-bake are the MOST tender. Serve w/yellow seasoned rice & fresh steamed green beans or aspargus. Chicken thighs are dark meat & some people only like white meat. However, if you marinate the chicken & cook in a frying pan(lightly coat the pan w/canola oil) & shred the chicken into small pieces......then, add taco seasoning & water & heat for 12-15 minutes.....you can make burritos or tacos. Just need a little tomato, taco sauce, sour cream.....and serve w/brown rice! EASY! & DElicious! Good Luck! Kris

Coconut Curry Chicken
INGREDIENTS:
1 potato, cubed
1/2 pound chicken thighs, cut into pieces
2 tablespoons vegetable oil
1 green bell pepper, seeded and cubed
1 small onion, chopped
1/2 cup coconut milk
5 tablespoons curry sauce
1/2 teaspoon salt
1 cup water, divided
1 teaspoon cornstarch

DIRECTIONS:
Place cubed potatoes in a microwave-safe dish and heat in the microwave on High for 5 minutes.
Heat oil in a large skillet over medium heat. Place chicken in oil and cook to brown. Then stir in green peppers and onions; cook about 4 minutes. Stir in potato, coconut milk, curry sauce, salt, and 3/4 cup water.
Mix together cornstarch and 1/4 cup water. Stir into skillet, and simmer 10 minutes.

Cut up apples, onion and orange and place in a crock pot
Add squirrel
Cover with water and cook till meat becomes tender
Check frequently since all squirrels do not tenderize at the same rate of time. Do not allow squirrel to over tenderize and fall apart.
After meat is done, remove and allow to cool completely
Mix salt, flour, pepper in a bowl
Dip dry squirrel quarters in well beaten egg and dredge in the flour mixture
Place bacon and butter in large iron skillet and heat, then add squirrel
Fry on very low heat uncovered till brown, about twenty minutes on each side.

SUPER EASY recipe...
get a jar of apricot preserves ( prefer. with chunks of real apricots in it ) , fresh garlic, fresh rosemary and some brandy.
(and hot water)

IF your plan was that you are frying or grilling the pork chops or chicken ... then, in a frying pan big enough to add the meat into AFTER it is cooked, put in all the ingredients...stir well to blend in ( the amount will depend on how many you are cooking for) and saute this "glaze" for a minute, then add meat back into pan... If you have time, ( reccomended) then put raw chops/chicken into roasting pan AND add all ingredients to make glaze, (mixed well first) then add into the roasting pan and cook all at once

On average, say 1 clove of garlic ( crushed) per pork chop..
about 2 table spoons of apricot preserve per chop, and the leaves off of 1 stick of rosemary per chop and about an ounce of brandy per chop and 2 ounces of hot water per chop.( the heat helps to break down the preserves)
The best thing about this recipe is, you can put in as much of one thing or the other as you like...it is simple and tastes great!

The pork chops with this glaze is excellent with mashed potatoes and even better with garlic mashed potatoes. Even better if you roast the garlic first..( take a whole head, wrap in tin foil, and pop it in the oven or on the bbq for at least 20 mins...) this makes the garlic flavour more mellow and yummy

Perfect with steamed veggies on the side like green beans!
That and a nice glass of wine and you will be a hit!

Stuffed Pork Chops with Grits


Prep Time: 6 minutes
Cook Time: 45 minutes
Yield: 4 servings
User Rating:

4 (1 1/2-to 2-inch thick) pork chops, bone-in, split to bone
1 pound bulk sausage, split into 4 equal portions
House Seasoning, as needed, recipe follows
Olive oil, for brushing
Grits:
2 cups water
1 1/4 cups milk
1 teaspoon salt
1 cup quick cooking grits, not instant (suggested: Quaker)
1/2 cup butter



Pork:
Set up grill for direct grilling. When coals are white hot, spread them evenly and place grate on top to heat. Meanwhile, stuff each pork chop with sausage and rub meat liberally with House Seasoning. Secure each pork chop with a wooden skewer or toothpicks (remember to remove before serving). Brush oil on grill grate to prevent sticking. Place pork chops on grate and grill until nicely browned, about 5 to 6 minutes. Turn and repeat process. An internal temperature of 160 degrees F is recommended for pork. Make sure your sausage stuffing and pork chop is thoroughly cooked.
Grits:
In a small pot, bring water, milk, and salt to a boil. Slowly stir grits into boiling mixture. Stir continuously and thoroughly until grits are well mixed. Let the pot return to a boil, cover pot with a lid, lower the temperature, and cook for approximately 30 minutes stirring occasionally. Add more water if necessary.
Grits are done when they have the consistency of smooth cream of wheat. Stir in half the butter and serve with remaining butter divided equally on top of each portion, or serve with fruit or with a savory meal.



House Seasoning:
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder
Combine all ingredients in a small bowl.


This recipe is so good especialy if you like southern cooking! But if not you can just eliminate the grits.

Layer very good seasoned italian canned tomatoes, thin slices of zucchini and/or eggplant, then the chops (thick-sliced), slices of onions, more veg, more tomato sauce, then some parmesan, in a covered baking dish. Cook at 300 degrees for about 40 min. The chops will be incredibly soft and juicy, and you've got most of your side dish made too.

try making stuffing mixed with 1/4 stick of butter with about a cup of water, in a baking dish, lay the pork chops on top and bake at 400 degrees for about 45 min, checking periodically you can even do this with chicken even throw some veggies on the table, you could even throw in a can of gravy for over the stuffing and pork or chicken just a suggestion, hope it works for ya good luck

this is how i'm makin' my chops tonight...... sprinkle both sides with rosemary and lemon pepper and fry in a heavy bottom pan with just enough oil to coat the pan, you dont want them swimming in it, over medium high heat. dont mess with 'em, let them sear ( depends how thick they are to say how long ) but let them get nice and caramelized on both sides. cook until no longer pink in the middle. take them out of the pan and keep warm. then add some white wine to the pan and scrape up all the good stuff and reduce the liquid till it gets a little thick. then add a little butter to richen the sauce up and pour over chops. serve with a nice steamed veggie or fresh tossed salad with a light vinegrette. voila! dang i better get cookin' !!

You asked for quick and easy. My aunt taught me this one.

Preheat oven to 350.
Salt and black pepper your chops.
Brown chops in an oven proof skillet with a little olive oil.
Open one can condensed chicken noodle soup. Pour over chops, distributing noodles evenly over the chops.
Place in preheated oven for 30 minutes.
