Fresh Tomato-Pepper Sauce
serves 2
1 cup fresh plum tomatoes, chopped
1/4 cup green pepper, chopped
1/4 cup red pepper, chopped
1/2 cup tomato sauce
1 TB. fresh basil, minced
2 garlic cloves, minced
1/2 onion, minced
1/4 cup red wine
1/8 tsp. black pepper
Pinch red pepper flakes
Pinch of white sugar or splenda sugar substitute
2 TB. Parmesan cheese, grated
Combine all ingredients in a saucepan and cook over med-low heat for 10 minutes. To add a flavor element I like to cut the tomatoes in half and cut the peppers in half cut side down on a baking sheet and spray with vegetable oil (olive oil), salt and pepper. Put under the broiler to bring out the sweetness and add roasted taste. Then chop and add to the sauce.
Add cooked meat, garden burgers cut up, mushrooms and your favorite vegetables (good with roasted zucchini).
Add cooked pasta (2 minutes less than package directions) directly to the sauce and finish cooking together for 2 more mins.
Use pasta water in the sauce if it's too thick.

OK, here is the sauce my italian grandma taught me which is the best and I still use today.. In a big sauce pot heat canned tomatoes (san marzano from Italy are the best). Crush them in your hands before putting in the pot. Add just a little dried oregano and basil. While that is simmering, in a frying pan, put some extra virgin olive oil. Add some chopped onion and fry until light golden brown. Then add a few garlic cloves, chopped fine. Watch out the garlic doesnt burn because your whole batch will be ruined. When that's done add a glass of burgundy red wine and boil for a minute, scraping the bits off the bottom of the pan. Throw all this into your sauce pot. Add a pinch of sugar and a dash of red pepper flakes. Now simmer the sauce on low, uncovered for a couple of hours. Stir from the bottom every fifteen minutes so it doesnt burn. Watch it. It will thicken nicely. Taste again and adjust your spices before serving. If the tomatoes are too tart you may have to add a little more sugar. You can freeze this also so make a nice size batch. Your kitchen will smell wonderful! Good luck and enjoy with your family! We used to wake up on Sunday mornings to the aromas of my grandmas cooking this. Very nice memories for me.

I've made Giada DeLaurentis' (Everyday Italian) "Simple Tomato Sauce" several times and many of my friends have said it is the best sauce they've ever had. My fiance is Italian and his entire family loves it. I add a little red wine in mine when I make it.

Mix water, corn syrup, and vinegar in saucepan.
Bring to a full, rolling boil.
In bowl, mix cornstarch with cold water.
Add this mixture slowly to the hot mixture, stirring constantly until the mixture returns to a boil.
Boil for 1 minute, then remove from heat.
When cooled, pour into another container and let stand overnight before using.
