Sounds like a good combo, just be sure to season the chicken or it may be a little blah.

Are you maling a casserole? Cook the rice as directed. Spray bottom of glass casserole dish or glass cake pan. Cover the bottom of the dish w/rice. Cover the rice w/beans(cooked). then, cover the beans w/cooked chicken(may be shredded or use boneless/skinless cooked chicken breasts). Season the chicken or cover w/salsa or salsa mix(picante sauce, brown sugar & 1 or 2 tablespoons of brown spicy mustard). Cover w/foil or lid & bake at 350 for about 35 minutes. Good Luck! Kris

no, just make Arroz con Pollo( yellow rice and chicken)....make the back beans separate....there is another dish U can make its called Morros...its white rice ( cook separate) mix the black beans and the white rice together, with some spices in it. Its a Cuban dish..

i wouldnt make it as a one pot dish, 'cause it would look kind of ugly, but if you simmer the beans with some onion, celery, carrot ( or whatever veggies you have on hand ) and add garlic and bay leaf and a little cayenne or black pepper or a splash of tobasco, you could serve it on top of the steamed yellow rice with the chicken baked or grilled on the side. sounds yummy to me! and healthy too. ( shhh dont tell! lol )

I'd make everything separate.

The rice and beans will absorb all the liquid and make the chicken too dry.

Are you talking whole chicken, chicken breast, legs, or cut up pieces of chicken?

if it is a can of black beans, make sure you rinse them other wise your rice will not be yellow. Sounds good to me.

You can. If that is waht you want to eat. It sounds nice. Give it a try , and have a backup plan if it turns out badly.
