Fried OKra
1 lb. sliced okra
1 egg beaten
1 1/2 cups buttermilk
Flour with salt and a little cayenne pepper added
Beat egg. Add milk. Dip okra in milk, egg mixture, then roll in flour.
Fry in hot oil until golden brown.

** Okra & Tomatoes **
(do not use a cast-iron pot for this or the okra will turn black)
4 slices bacon, diced into small pieces
1 small onion, peeled and chopped
2 cloves garlic, minced
2 (15-ounce) cans diced tomatoes
1 tablespoon chicken base
1 tablespoon sugar
2 cups fresh okra, cut into 1-inch pieces (may use frozen, if fresh not available)
Fresh ground black pepper
Cook bacon slightly. Saute onion and garlic with bacon until tender. Add tomatoes, chicken base, sugar and pepper. Stir well and let simmer for about 20 minutes. Adjust seasoning if needed. Meanwhile wash okra and remove fuzz if using fresh and cut into pieces. Add the okra and simmer until okra is done, about 20 more minutes (less if using frozen okra.)

You can also slice into 1/2" slices, toss w/ salted and peppere dcornmeal, and fry quickly in an inch of hot oil in a skillet. Drain on paper towels and salt immedicately.

Wash it and cut both ends off. Slice in circles put flour on it and drop it in grease in a frying pan. Cook to all okra is browned about 1/2 hour.
Cut the top off and make sure you don't cut down in the seed pod. Cover with water and boil for 30 min. Season with salt and a little fat back grease.
