Roast 1/2 the size of your crock pot. Carrots, potatoes and whatever YOU like. Cut veggies into chunks and drop on top of the roast. Open 2 or 3 cans of Campbell's French Onion Soup and pour on top. Add 1 can water. Leave! Go shopping.. to work.. have fun! When you come home 6 to 8 hours later the meat will FALL APART! Making gravy from the juice is the hardest part! YUM!

Crockpot Mexican Chicken

2 lbs boneless chicken breasts, cut in small pieces
1 can Ortega chilies, chopped
1 can nacho cheese soup
1 can cream of mushroom soup
1 can cream of chicken soup
1/2 lb Monterey Jack cheese, shredded
1-3/4 lbs nacho cheese Doritos

Place chicken in bottom of Crock-Pot slow cooker. Add chilies and soups. No need to stir or mix. Cover and cook on low for 8 to 9 hours. Serve with Doritos. Sprinkle with cheese before serving.

I didn't get this recipe out of a book. I just looked at what I had in the frig and pantry, and threw it together. It was delicious and we will be eating it again soon! The pork comes out incredibly tender this way. The carrots sound a bit odd, but they really work well with this.

Crock Pot BBQ Pork Chops

2-4 lbs pork chops (I used boneless that I had gotten on deep discount, but I am sure you can use any pork.) 1 bottle BBQ sauce 4-5 carrots

Slice carrots very thinly. Place in bottom of crock pot. Layer pork chops with BBQ between layers. Pour rest of sauce in. Cook on low 8 hours.

Here's a great cheese dip. 1 lb. Velveeta cheese, 1 lb cheddar cheese, 1 lb. Monterrey jack cheese. 1 lb hot sausage, 1 can cream chicken soup, 1 small can green chili's, 1/2 onion, 2 tbs. milk, 1 stick of butter, 1/2 cup sour cream, 1 can rotell any kind, Brown sausage, and throw everything in the crock pot. Wonderful on corn or any other chips. Enjoy

Mix regular bottle BBQ sauce with honey and some ketchup, toss in chicken bits (wings, drumettes, anything!) and let her go for as long as you want, couple of hours is good. Fix it before you go out, come back to delish dinner. (Throw a few pots. in the oven too) Salad? Takes 3 mins. You got it all!! Enjoy.
