I know we all love to eat out and so forth.. but what happened to old fashioned homemade cooking? Does anyone have a favorite homemade italian dinner that they love to make?

Lasagna

Chicken Piccata
4 servings

1/3 cup all-purpose flour
1/4 tsp salt
1/4 tsp freshly ground pepper
4 boneless, skinless chicken breast halves (about 1 1/4 pounds) pounded thin
3 tbsp butter
1/2 cup chicken broth
4 thin slices lemon
15 - 20 capers
parsley, for garnish

In shallow bowl, combine flour, salt and pepper. Dip chicken in flour mixture, coating well.

In 12-in skillet, melt 1 tablespoon of butter over medium heat and cook half of the chicken until thoroughly cooked, turning once. Remove to serving platter and keep warm. Repeat with remaining butter and chicken.

In same skillet, add broth, capers and lemon slices. Bring to a boil over high heat, scraping up browned bits from bottom of pan. Stir in remaining butter until melted. Pour sauce chicken and garnish with parsley, if desired.

Pasta E Fagioli (Italian soup) with Italian Sausage Recipe

A delicious version of this popular Italian soup. Adding the sausage (regular or turkey) makes it a satisfying meal if served with a nice warm baguette.

1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, finely chopped
1 carrot, peeled & chopped
1 stalk celery, chopped
1 lb sweet Italian sausage links or hot Italian sausage, casing removed and crumbled (can use turkey sausage)
2 teaspoons dry oregano
1 tablespoon dry basil
1-2 teaspoon red pepper flakes, to taste
1 1/2 cups canned chopped tomatoes with juice
3-4 cups vegetable stock or chicken stock
1 can progresso cannellini beans
1 cup ditalini or small shell pasta
2 tablespoons chopped flat leaf parsley
parmesan cheese


Heat olive oil in a large heavy pot over medium high heat.
Cook onion in oil 2 minutes.
Stir in garlic, celery and carrots and cook for 3 minutes.
Add and brown crumbled sausage.
Add basil, oregano and red pepper.
Toss to coat.
Stir in tomatoes and stock.
Bring to a boil.
Reduce heat and simmer 30 minutes.
If necessary, add an additional cup of stock or water and stir in beans and tiny pasta.
Simmer for 6- 8 minutes or until pasta is tender.
Stir in parsley and serve hot with grated Parmesan cheese.

Cooked bow tie pasta. Cooked frozen spinach, sauteed tomatoes, mushrooms artichoke hearts in a good Olive oil.
Top with fresh grated Parmesan, feta cheese, olive oil and balsamic vinegar to taste.
Serve with chicken breast I will be over for dinner.

Manicotti! My family used to ALWAYS eat Lasagna, now that I have them hooked on Manicotti, they don't even ask for the Lasagna any more. And, it doesn't take nearly as long to cook in the oven, so it's great for a summer italian meal :)

Spaghetti of course is my favorite. It seems that everytime I make it I add a little more of this or that. My family agrees that each time it gets better. It also isn't that hard to make. I brown the beef & drain. Saute' onions and mushrooms. Add both of these to crushed or puree'd tomatoes bring to a slight simmer then start adding my seasons. Ok you can cheat a little and add one of the spaghetti season packs, but I still add more. We like spicy foods, so I add Cheyenne or Cumin, etc.....
