I like Tilapia especially for its nutty flavors. This is a very easy and fast recipe to roast Tilapia, which brings out all the delicious flavors of tilapia. Serve with pasta, salad or bread.
7 ounces tilapia fillets (1 fillet per serving)
1/2 teaspoon lemon juice
2 tablespoons olive oil
5 sprigs thyme (5-10 cm each)
1 garlic clove, crushed
1/2 onion, sliced
salt, to taste
pepper, to taste

Drizzle lemon juice over Tilapia fillet. Salt and pepper to taste.
Heat oil in a pan. Add thyme and garlic.
Roast fillet on medium high heat on each side for about 3 minutes. Do not overcook.
Remove fillet from pan and drain on paper towels.
Add onion slices to pan and cook until soft for about 1-2 minutes.
Serve fillet with onion slices.
NOTE: Can easily be adapted for more than 1 serving. Just increase the amount of ingredients to your needs, but use as less oil as possible and do not use more than 8 sprigs thyme and 2 cloves garlic for one pan.

This is really simple, but very good.

Sprinkle tilapia pieces with salt, pepper, and cayene pepper
or Cajun spices.
Heat some olive oil or other oil in a frying pan.
Place the tilapia pieces in the pan and fry for four minutes.
Gently turn the pieces and fry the other side for four minutes.
Serve immediately.

Tilapia , also known as St. Peter's fish is delicious without much done to it. Sometimes I cover it with breadcrumbs mixed with parmesan and bake it in the oven. It can also be poached on top of your favorite mix of veggies such as onion, tomaotoes and peppers that have been sauteed first.

If you're using a whole one, you can make slashes across the outer parts of the fish. Season with finely grated onions, ginger, garlic and salt to taste. Rub into the slashes on fish and stuff remainder in cavity of fish & head. wrap in foil, place in a baking pan, and bake at 350 degrees F for about 20 mins. or less if you like fish more moist.
